Instructions
- 1
Step 1

Prepare the necessary ingredients.
- 2
Step 2

Dry the nuts in the oven. Let them cool.
- 3
Step 3

Coarsely chop the cooled nuts in a blender.
- 4
Step 4

Separate the eggs into yolks and whites. Put the whites in the refrigerator. Transfer the yolks to a bowl. Add sugar and rub until smooth.
- 5
Step 5

Add kefir, 1.5 cups of flour, and baking powder. Start kneading the dough with a spoon, then, when it becomes difficult to stir, continue by hand. Add the remaining flour in portions. You should get a firm dough that does not stick to your hands.
- 6
Step 6

Wrap the dough in plastic wrap or a bag. Put it in the freezer for 15 minutes.
- 7
Step 7

Take a baking sheet and line it with parchment paper. When the time is up, take the dough out of the freezer. Divide it into two parts. Grate both parts on a coarse grater. Place the baking sheet in an oven preheated to 180 degrees for 15 minutes. The dough should lightly brown and bake through completely. Cool the finished dough base.
- 8
Step 8

Break the chilled dough into pieces and pulse it in a blender. No need to grind it too finely!
- 9
Step 9

In a bowl, combine the chopped nuts and crumbs. Mix well.
- 10
Step 10

In a separate bowl, beat the egg whites. Gradually add the sugar and lemon juice.
- 11
Step 11

The whipped mixture should be thick and homogeneous.
- 12
Step 12

Add the nut mixture and pastry crumbs to the whipped egg whites. Stir with a spoon.
- 13
Step 13

Preheat the oven to 110 degrees. Line a baking tray with parchment paper. Using a tablespoon, scoop up the egg white and nut mixture. Roll it into a ball. Transfer it to the baking tray. Place the prepared cookies into the warm oven. Bake for 20–25 minutes. Take into account the specifics of your oven! The finished cookies should hold their shape and be firm on top. Without removing them from the tray, cover with a towel and leave for 8 hours, ideally overnight.
- 14
Step 14

Transfer the well-chilled, rested cookies from the baking sheet. They have now become denser and do not crumble.
- 15
