Description
Perfect for tea and coffee. Once again, it's proven that you can make a delicious, beautiful, and affordable dessert at home. The cookie base is shortbread dough, and for the filling, I use any jam I like (raspberry, apricot, blackcurrant, or strawberry). You can top the cookies with powdered sugar or leave them as is—they look very attractive and appetizing even without any decoration.

1. I chill the margarine, then cut it into small pieces. I put sugar into a bowl and rub it with the margarine, add eggs, salt, baking soda extinguished with vinegar. Finally, I add the flour, previously sifted.

2. I knead the dough and divide it into 2 parts, one of which is larger than the other. I wrap the smaller part in plastic wrap or place it in a bowl and cover it with a towel, then put it in the refrigerator for 30 minutes. I wrap the second part in plastic wrap and leave it at room temperature.

3. I slightly roll out the portion of dough that remained at room temperature and transfer it to a baking sheet. Then I roll the dough out completely into a flat layer right on the sheet.

4. Place your preferred jam (I used apple) onto the rolled-out dough and spread it evenly.

5. Take the smaller piece of dough out of the refrigerator, grate it on a coarse grater, spread it over the filling, and place in a preheated oven at 160-180 degrees for 30-40 minutes.

6. I take the baked goods out of the oven and immediately cut them into small diamond shapes with a knife. I wait until the cookies cool slightly and then serve them.
