
Sweet potato cookies
Description
The pastry is easy and quick to prepare. This unusual aromatic cookie will make a great breakfast dish. Serve the cookies with honey, butter, or ham slices. Serve warm or chilled. Perfect with tea.

1. Peel the potatoes and cut them into cubes. Cut the butter into small cubes. Cook the sweet potatoes in a medium saucepan with boiling salted water until tender, 8 to 10 minutes.

2. Drain the water, cool, add orange zest and mix until a puree-like consistency is achieved. Place the baking tray in the lower third of the oven preheated to 220 degrees. Grease the bottom and sides of the baking pan with oil.

3. Mix the flour and the next 7 ingredients in a large bowl. Add the butter cubes and mix until the mixture resembles coarse crumbs.

4. Beat 3/4 cup of sweet potato puree and buttermilk in a medium bowl. Add to the flour mixture, mix with a fork.

5. Place the dough onto a floured work surface and roll out into a 2.5 cm thick circle. Using a round cookie cutter or a circular mold, cut out cookies, dusting the cutter with flour after each cut. Gather the dough scraps, roll out again into a 2.5 cm thick circle, and cut out more cookies.

6. Place the cookies in the prepared baking pan, brush with melted butter. Bake in the oven until golden brown, about 20 minutes. Let cool in the pan for 10 minutes.

7. Cut each biscuit in half horizontally. Spread the bottom half of each biscuit with honey and butter, then top with ham slices and cover with the other biscuit half.
