
Spelt flour cookies
Description
Homemade tea-time baking. Spelt flour cookies are every bit as good as those made with familiar highest-grade flour. In my view, they are also healthier, because spelt—and especially whole-grain spelt—offers many beneficial properties. You can adjust the amount of sugar to your taste. Using chocolate and sprinkles or not is up to you, so treat this recipe as a base. Serve with tea or coffee.

Prepare the ingredients.

Into a bowl for mixing the dough, add flour, starch, baking powder, and vanilla sugar.

Make a well in the flour, pour in melted butter (or vegetable oil) and water (or milk). Add about 100 grams of sugar; keep some of the sugar for dusting the cookies.

Knead the dough; it will be crumbly and not very elastic. For convenience, divide the dough into 2 parts, roll each into a log, and wrap tightly in plastic wrap. Place the dough in the freezer for 30 minutes.

After 30 minutes, take the dough out of the freezer and roll it in cane sugar.

With a sharp knife, cut the dough into rounds about 1 cm thick.

Arrange the cookies on a baking sheet and bake at 180 degrees for 15 minutes.

At this stage the cookies are already done, but you can take it a step further.

Melt the white chocolate in the microwave.

Dip the edge of the cookie in melted chocolate and sprinkle freeze-dried raspberries on top.

Let the chocolate set. The cookies are done! You can serve them with tea or coffee. They are very tasty and crumbly, made with wholesome spelt flour.
