Rub the butter into the flour and salt until it resembles breadcrumbs.

Beat three egg yolks with powdered sugar and vanilla. Mix the remaining yolk with one tablespoon of water and set aside for brushing the cookies.

Add the beaten egg yolks to the butter-flour crumbs.

Knead the smooth dough, then place it in the refrigerator for half an hour.

To make the cookies, we won't roll out the dough. It's very delicate and will tear when rolled. Pinch off small pieces of dough, roll them into balls, and then you can flatten each one. Shape the cookies as you prefer. Place the cookies onto a baking sheet lined with parchment paper.
