
Cookies from cucumber brine
Description
Homemade treats for tea. This recipe yields a large quantity of cookies, making it very cost-effective to prepare. You won't taste the brine at all; however, thanks to the acid contained in it, you'll end up with genuine shortbread cookies that melt in your mouth. Choose the right brine. It should not be bitter. If your brine is very salty, use less of it.

Pour the brine, vegetable oil, and sugar into the bowl of a food processor (initially using the whisk attachment). Beat until smooth. Then switch to the dough attachment, sift the flour and baking soda into the processor bowl, and knead until you get a smooth dough. Let the dough rest for 15 minutes.

Roll out the dough to a thickness of 0.5-0.7 cm and use cutters to shape the future cookies.

Line the baking sheet with parchment paper. If you don't have parchment paper, it's not a problem: the cookies will easily release from a greased baking sheet.

Place the cookies in a preheated oven at 200 degrees for 10 minutes. As soon as you see the cookies turning golden brown, remove them from the oven and enjoy.
