
Almond cookies
Description
Delicious baked treats for the whole family. This cookie is traditionally made in Germany for Christmas holidays, but it's so tasty that making it only once a year would be a culinary crime. You can use almonds with their skins; there's no need to blanch them beforehand—this will save time and effort. Serve warm or chilled. Perfect with tea.

1. Grind the almonds in a food processor until they resemble breadcrumbs.

2. In a separate bowl, beat the egg whites until soft peaks form, then add powdered sugar and lemon juice, and beat until stiff peaks form. Set aside about 0.5 cup.

3. Add almond crumbs and cinnamon to the beaten egg whites (to the larger portion), and mix well.

4. Wrap the dough in plastic wrap and refrigerate for 1 hour. After an hour, remove it from the refrigerator and sprinkle the work surface with sugar.

5. Roll out the dough into a sheet 0.7-0.8 cm thick. Cut out cookies using cookie cutters.

6. Place the cookies on a baking sheet and decorate each one with the reserved whipped egg white mixture.

7. Bake the cookies in a preheated oven at 160-170 degrees Celsius for 8-12 minutes. Transfer the cooled cookies to a container and store them in the refrigerator for several weeks.
