
Cornmeal cookies
Description
To make corn cookies, you'll need just one cup of cornmeal, a few tablespoons of honey, one egg, and odorless vegetable oil. You can replace the baking powder with baking soda—it reacts well with honey, and the cookies will be just as fluffy as when using baking powder. See the recipe. The baked goods are ready. Serve at the table.

Prepare the ingredients. If the honey is too thick, place it in the microwave for a minute.

Put honey, sunflower oil, and egg into a bowl.

Whisk the mixture well with a whisk until the ingredients are combined.

Add the corn flour and baking powder in parts. You can use a spoon instead of a whisk; it will be more convenient for mixing the dough.

The dough is ready. Preheat the oven to 180 degrees, line the baking sheet with parchment paper.

Divide the dough into 12–16 portions, depending on the desired cookie size. I made 16 pieces of 15 grams each. Roll into balls and place them on parchment paper. You can flatten the balls slightly if you wish, or leave them as is. The cookies do not change shape during baking.

Bake for 10 minutes, keep an eye on it—honey pastries burn quickly. The cookies will develop beautiful cracks. Let cool and enjoy!
