Description
We do not add baking powder to the dough, as it contains enough fat, which allows this cookie to be stored for a long time in a closed container. The original recipe does not include vanilla, but I recommend adding vanilla or nutmeg to soften the pronounced smell of egg yolks. Enjoy your cooking! Serve cooled or slightly warm.

Prepare the necessary ingredients. Take the butter out of the refrigerator in advance so it softens. Finely chop the walnut kernels in a way convenient for you. I simply roll them with a rolling pin.

Mix the yolks with powdered sugar and vanilla. Add softened butter and beat.

Add the flour and knead a soft dough. Wrap it in plastic wrap and let it rest in the refrigerator for 30 minutes.

Preheat the oven to 180°C. Roll out the dough into a 0.5 cm thick layer. Cut out cookies using a shot glass. Make a small indentation in the center of each piece. I got 40 pieces.

Place the dough pieces on a baking sheet lined with parchment paper or a silicone baking mat. Brush with lightly beaten egg white and generously sprinkle with chopped walnuts. Bake for 20–25 minutes until lightly golden. Let cool.
