Description
The pastry is simple and quick to prepare. Argentine "Alfajores" are sandwich cookies filled with dulce de leche and rolled in coconut flakes on the edges. You can also roll them in crushed nuts or crumbled cookies, but the first option is more common. Very sweet and high in calories, yet incredibly delicious, these cookies are perfect with a cup of black coffee—of course, without sugar. The pastry is ready. Serve at the table.

Sift both types of flour and starch into a bowl. Add salt and baking powder, then add regular and vanilla sugar, and mix the mixture.

Add the yolks and softened butter to a consistency of sour cream.

Quickly mix the dough with a spatula. If the dough does not come together into a ball, add another yolk and a spoon or two of cold milk. That's exactly what I did.

The dough should be tender but pliable; don't overwork it with extra flour. Roll it into a ball, place in a bag, and refrigerate for half an hour. Chilled dough is easier to work with.

Divide the chilled dough into 2-3 parts and roll out one part at a time to prevent the dough from warming up and melting. It's convenient to roll it between two sheets of parchment paper. The thickness of the dough should be 5 mm. Use a cutter to cut out circles 5-6 cm in diameter.

Carefully transfer the dough onto a baking sheet lined with parchment paper or a baking mat, and bake in a preheated oven at 200 degrees until it reaches a beige-pink color. Do not overbake.

Carefully remove the finished cookies onto a wire rack and let them cool completely. The cookies are fragile!

Glue the cookies together in pairs using boiled condensed milk, spreading it in a thin layer. Also spread condensed milk on the edges and roll the cookies in coconut flakes.
