
Valentine cookies made from cornmeal
Description
The pastry is simple and quick to prepare. This recipe will yield about 40 cookies. Serve cooled or slightly warm.

1. Preheat the oven to 200 degrees. In a medium bowl, mix flour, cornmeal, and salt.

2. In a large bowl, using an electric mixer, beat the butter and 1/2 cup granulated sugar on medium speed until creamy, about 3 minutes. Add the egg and 1 teaspoon vanilla extract, and beat to combine.

3. Gradually add the flour mixture and beat with a mixer at low speed until smooth.

4. Pour 1/4 cup of sugar into a small bowl. Shape the dough into balls about 2.5 cm in diameter and roll them in the sugar.

5. Place the balls onto two baking sheets lined with parchment paper. Use the bottom of a glass to flatten the balls into cookies about 4 cm in diameter.

6. Using a heart-shaped cutter about 2.5 cm in diameter, press a heart shape into each cookie. Do not cut all the way through! Bake the cookies in the oven until the edges are golden brown, about 10 minutes, rotating the baking sheets halfway through baking. Let the cookies cool completely on a wire rack before applying the glaze.

7. In a small bowl, beat the powdered sugar with 1/4 teaspoon of vanilla extract and 1 3/4 teaspoons of cold water. Add food coloring and beat.

8. Using a small spoon, spread the glaze inside the outlined heart on each cookie. Let the glaze set for 15 minutes.
