
Cracker-crisp
Description
The recipe won't take much time. This Italian crisp cookie, known as "chiacchiere," is traditionally prepared for the carnival held one month before Easter. The alcohol used in cooking loses its potency and helps prevent the dough from absorbing excess oil. After frying, place the crisps on a plate lined with paper towels to remove excess oil. Cenci can be dusted with powdered sugar or drizzled with liquid honey. Either way, they will be delicious.

Combine the soft butter, lemon zest, rum, eggs, salt, baking soda, and powdered sugar. Add the flour and knead into a firm dough. Place in a plastic bag and refrigerate for 30 minutes.

Divide the dough into 3-4 parts. Roll each part into a sheet 3-4 mm thick. Cut into equal strips, then into diamonds or squares.

In a deep pan, heat the oil and fry the pieces until golden brown. Remove with a slotted spoon and let cool.

Dust with powdered sugar or drizzle with honey.
