In short, definitely try this easy wok liver recipe—I promise you'll love it. 1) First, we need to remove the bitterness from the liver. Place the liver in a colander and sprinkle it generously with coarse salt. Let it sit for 10 minutes. Then rinse the liver under water, let it dry, remove any membranes, and cut it into small pieces. 2) For the sauce, mix soy sauce and oyster sauce in a small bowl, add rice vinegar, and stir in minced garlic and ginger. Peel the onion and slice it into thin strips. 3) Place the wok over high heat, pour in the oil, and wait until it starts to smoke—this means it's properly heated. Add the liver to the hot oil and quickly stir-fry over high heat until it turns paler in color. Then add the sliced onion, mix well, cover the wok with a lid, and continue cooking over high heat for 5–7 minutes. 4) Pour the prepared sauce into the wok, mix everything again, and cook for another couple of minutes with the lid on. Then remove the lid and let the sauce reduce slightly before turning off the heat. The liver is now ready. Serve it hot with rice or any other side dish of your choice. Enjoy your meal!
