
Liver in batter
Description
I've known this recipe for liver in batter for quite some time, and it's one of my favorites. Generally, I try to include beef liver in my diet as often as possible due to its health benefits, but it's not that easy to cook it deliciously. However, this simple recipe for liver in batter is a real find for me, as it's very easy and results in liver that's extremely tasty and tender. And now I'm happy to share it with you.

So, first of all, we need to choose good fresh liver. Dull and whitish liver won't work for us, but dark red and shiny liver is exactly what we need.

Now we thoroughly wash the liver and cut it into pieces no thicker than 1 centimeter. We sprinkle with salt and red pepper, mix, and layer onto a plate. Place it in the refrigerator for about an hour.

Break 2 eggs into a deep plate and beat them into a thick foam. Lightly salt.

Place flour in a separate plate. Dip the liver first in flour, then in egg; you can repeat the process for a thicker coating. Heat oil in a skillet and place the liver pieces in it. Fry over medium heat for about 10 minutes on each side. The cooked liver turns out quite filling, so it's best served with a light side dish.
