Step 1

Prepare the listed ingredients. You can use beef liver, preferably veal. Buy the netting in the meat section at the market.

Step 2

Rinse the net in water and place it on a board, drying it with paper towels. If it is torn, place one piece of netting over the other to cover the hole.
- 3
Step 3

Rinse the liver in water, dry with paper towels, and season both sides with salt. Place on a rack.
- 4
Step 4

First, fold the edges of the netting inward, then roll it up like a roulade so that the liver is completely covered by the netting.
- 5
Step 5

Grease the baking dish with vegetable oil and place the dough in it. Put the dish in the oven, preheating it to 200 degrees.
- 6
Step 6

After 20 minutes of baking, prick the bottom of the crust several times with a knife, making sure to reach the liver, so it doesn't remain undercooked inside. Bake for another 30 minutes.

Step 7

Remove the liver in the fat netting from the oven, let it cool slightly, and cut into portion pieces. Serve warm.
