This recipe won't take much time. Anyone can prepare liver in clay pots at home, the main thing is to have the pots available. If you don't have them, simply layer all the ingredients in one large casserole dish or a thick-walled pot—it will turn out just as delicious. This dish is great served on a festive table even without a side dish, as it's very juicy thanks to the vegetables, yet not greasy. Of course, the classic Slavic serving with potatoes is still an option, so that's up to you. 1. Rinse the liver, remove any membranes, and cut into small pieces or cubes. Place in a bowl, season with salt and pepper, and let it sit for a while. If you have milk, you can soak the liver in it—this will make it even more tender and juicy. 2. While the liver is marinating, prepare the vegetables. Wash and peel the carrots, onion, and celery, then dice them into small cubes. 3. Heat a skillet with vegetable oil and sauté the vegetables until the onion turns golden. 4. Take your clay pots and layer the ingredients. Place the liver at the bottom, then add the sautéed vegetables along with the remaining oil. You can sprinkle them lightly with salt. 5. Pour sour cream over the top. Finely chop the green onions and sprinkle them over the sour cream. 6. Add a layer of tomatoes. Wash the tomatoes, slice them thinly, and arrange them in a tight layer in each pot. 7. Sprinkle with a bit more salt, then carefully pour in broth or water. 8. Place the pots in a preheated oven and bake for about 40 minutes. After this time, check the liver for doneness with a toothpick; if it's not fully cooked, continue simmering a little longer. Serve this delicious dish right in the pots, garnished with fresh herbs and grated hard cheese on top.
