
Duck liver

1. Peel the onion. Then slice it into half-rings, moistening the knife blade with cold water. Pour vegetable oil into a frying pan. Heat it up and add the onion half-rings, frying until half-cooked.

2. Wash the duck liver and make small incisions on it. Pat it dry with a paper towel (to prevent oil splatters). Place the pieces of liver into the frying pan with the onion.

3. Fry until the edges of the liver turn light. Then add salt and red ground chili pepper (to taste).

4. Flip the liver, then cook the second side over low heat, covered, until fully done (approximately 5 minutes). Turn off the heat and let the liver continue to simmer, covered, for another 5–7 minutes. The liver is ready. Serve it with vegetables and various side dishes.
