
Liver stewed in white wine with roasted pepper
Description
Recipe for liver cooked in white wine with roasted peppers. Liver is rich in iron and considered very nutritious. Roasted peppers are also highly beneficial.

1. First of all, we'll prepare the pepper (we use yellow pepper, which better complements the color of the liver). Place the pepper on a baking sheet and bake it in a preheated oven for about fifteen minutes over medium heat. Don't forget to turn the pepper occasionally.

2. Peel the onion and slice it thinly into half-rings. Pour vegetable oil into a frying pan and sauté the onion over low heat until it becomes semi-transparent.

3. Rinse the liver thoroughly under running water, drain in a colander and let the water drip off. Add the liver to the sautéed onions, stir occasionally, and simmer until the liver begins to turn pale. Add crushed garlic, season with pepper and salt. Then pour in the white wine, keep the heat high, and continue simmering for another five to seven minutes, stirring occasionally. Finally, cover with a lid and let it steep for about five minutes.

4. Remove the skin from the peppers, cut each pepper into four pieces, and discard the seeds and partitions. Arrange the pepper pieces on plates in the shape of flower petals. Place the liver with onion in the center of the plate. Garnish with herbs.
