
Veal liver
Description
Veal liver is more tender in taste than beef liver, cooks faster and easier. But it still needs to be soaked to remove blood and clots, and membranes and vessels should be trimmed off. To prevent the offal from becoming tough, add salt only at the very end of cooking, after frying, and don't overcook it. If desired, you can pound the liver pieces, which significantly reduces cooking time. However, do this inside a plastic bag to avoid splatters.

Step 1

Prepare the listed ingredients. Rinse the veal liver in water, cut into portion pieces, removing membranes, tendons, blood vessels, and connective tissues.

Place the offal pieces in a deep container—a bowl, salad bowl, or pot—and cover with cold water. Soak for about 15 minutes, stir, then drain and cover with fresh water. Optionally, for the second soaking, use milk—fresh or sour—for even more tender liver flavor. Soak for another 15 minutes. It's advisable to do this step in advance, about half an hour before starting to cook.

Line a plate or dish with paper towels and place the liver on it. Gently press the liver from all sides with the towels to remove excess liquid. At this stage, you can also tenderize the liver if you want to make cutlets, but do so inside a plastic bag!

Heat vegetable oil in a skillet and add the offal pieces. Sear for about 5–8 minutes on one side over medium heat. It's normal for blood to appear on the surface of the liver pieces! Do not salt at the beginning of cooking, otherwise the liver will turn out tough.

Flip the liver to the other side using a fork and cover the container with a lid. Sear for about 10 minutes. During this time, the offal will cook through and steam inside. Then flip it over again and sear for another 1-2 minutes, then season with salt and pepper. Keep in mind that cooking time directly depends on the size of the liver pieces.

Place the hot veal liver on a plate and serve with any side dish: buckwheat, rice, pasta, fresh vegetable salad, etc. Thanks to this cooking method, it will turn out juicy, flavorful, and with a nice browned crust. Enjoy your meal!
