
Liver with cherries
Description
As strange as it may seem, liver (and meat in general) goes perfectly with berries, especially tart-sweet ones, rather than purely sweet. Cherries are a great substitute for cranberries or blueberries. To prepare liver with cherries, we'll need fresh pitted cherries, beef (chicken, pork) liver, spices (basil, mixed peppers), and a little cognac.

Prepare the ingredients. Cut the liver into pieces. Sprinkle cherries with sugar and let sit for half an hour.

Cut the red onion into wedges, chop part of the green onion into feathers, and the remaining part into thin rings. Drain the juice that has formed from the cherries.

First, sauté the onion, then add the liver. Fry everything for about 10 minutes.

Add green onions and cherries. Mix and fry for another 2 minutes, then pour in the cognac and keep over heat for another minute.

Pour the syrup from the cherries into a frying pan, add one spoonful of sugar (or two). Cook until it thickens.

Serve the ready liver with cherries on lettuce leaves, pour over the syrup, add pepper, and sprinkle with a little sesame.
