
Liver with rice in dough
Description
The recipe won't take much time. If you don't have the energy to stand by the stove, but have some leftover liver and rice from yesterday's lunch or dinner—I'll tell you: the baking is ready. Serve it at the table.

If you don't have pre-cooked liver, you need to rinse the liver, clean it, and sauté it together with onion in vegetable oil until fully cooked. I use turkey liver, which cooks quickly. Season with salt and pepper to taste.

We cut the cooled liver into small pieces. You can pass it through a meat grinder, but I prefer it in pieces.

Mix the liver with boiled rice. You can add chopped dill or parsley.

Prepare the dough. Crack the eggs into a bowl, add salt, sugar, and vegetable oil. Whisk and mix well with a whisk.

Add kefir or sour milk and mix.

And add the flour mixed with the baking powder.

The dough turns out to be the consistency of pancake batter.

Grease the baking pan (mine is 18 cm in diameter) and dust with flour. Place half of the dough inside and smooth it out.

Evenly distribute the liver with rice.

And cover with the remaining dough. Place in a preheated oven at 180-190 degrees and bake for about 40-45 minutes.

In my family, we like a slightly crispy cheese crust, so after 20 minutes I sprinkle the pie with cheese grated on a coarse grater and put it back in the oven to finish baking. If you prefer softer cheese, sprinkle it on the pie about 10 minutes before it's done.

And here our dish is ready. Remove it from the mold and let it cool for about 10-15 minutes.
