
Liver with potatoes in the oven
Description
The recipe won't take much time. 1. Peel the potatoes and place them in a deep bowl. Season with salt and pepper to taste, add a bit of thyme or other spices as desired. 2. Peel and thinly slice the onion into half-rings, and press the garlic. Add both to the potatoes. Drizzle with olive or any other oil and mix thoroughly. 3. Transfer the potatoes onto a baking sheet or into a large ovenproof dish and place in a preheated oven for about 15–20 minutes. 4. While the potatoes are baking, prepare the liver. For this oven-baked liver and potatoes recipe, you can use not only chicken liver, as in this case, but any other type. Rinse the liver, dry it, and remove any membranes. 5. Season with salt to taste, add a pinch of pepper and a few drops of olive oil. Gently mix and set aside. 6. Remove the potatoes from the oven. Stir them slightly, drizzle with a mixture of olive oil and lemon juice, then place the liver pieces alongside. 7. Cover with foil and bake for 10–15 minutes, then uncover and continue baking until the liver is cooked through and nicely browned. 8. Once the liver and potatoes are ready, sprinkle with fresh herbs and serve hot.
