Description
I suggest preparing "New Year's Liver." This is a hearty and affordable dish that will look great on a festive table and also add variety to your everyday meals. For the filling, you can use practically anything you like. Today I'm making a simple, tasty, and healthy version with buckwheat and vegetables. You can cook this dish on the stovetop using any heavy-bottomed pot, but I used my multicooker for convenience. Prepare all the ingredients.

Rinse the buckwheat groats and boil them until almost done.

Fry the onion with the carrot and add to the buckwheat.

Season the filling with salt and pepper and mix.

Wash the liver, clean it, and make an internal pocket by cutting it along its entire length and width with a sharp, wide knife.

Stuff the resulting "pocket" with the prepared buckwheat and vegetable filling. If necessary, secure the edges with toothpicks. Sear the liver on both sides for several minutes.

Dilute the sour cream with 200 ml of water and pour it over the liver. Season the liver with salt and pepper, and simmer for 50 minutes.

Periodically moisten the liver with the liquid and turn it once during the process. The "New Year's" liver is ready.
