Description

What could be more delicious and aromatic than homemade bread? It doesn't matter which national cuisine its recipe belongs to! I enjoy baking patyr—a festive Uzbek bread.     Prepare the ingredients. Let's get started!

    Add sugar, salt, and a piece of fresh yeast to warm milk (38-40 degrees, not higher). Dissolve everything, stirring with a wooden stick or spatula.

    Melt the lamb fat in a small saucepan, then pour it warm into the milk. Mix slightly.

    Add the flour and knead the dough. Do not add more flour than specified in the recipe; the dough should not be stiff.

    The finished dough is very pliable, elastic, and pleasant to the touch. Cover it with a towel and place in a warm, draft-free spot. You can slightly warm the oven and put the dough inside. The dough rises slowly and not very much, so don't be alarmed. After an hour, take it out, press it down with your hands, and reshape into a ball again. Let it rest for another hour.

    After an hour, punch down the dough again. Knead it on the table without adding flour. Grease the baking sheet with oil or dust it with flour. Place the dough in the center of the pan and shape it into a loaf as shown in the photo. Make the center of the loaf thin, prick it with a skewer or fork, and make the edges thicker. Sprinkle the center with sesame seeds and let the dough rest for about 20 minutes, covered with a towel.

    Before baking, brush the dough with water. Place the patyr in the oven for 20-25 minutes at a temperature of 200-220 degrees. Ready!
