Molasses is used to give dough viscosity, rich flavor, and a distinctive color. It is commonly used in baking gingerbread, cookies, marshmallows, certain types of bread, ice cream, and caramels. Additionally, it is added to alcoholic beverages. Purchasing molasses can be quite difficult, except in specialized confectionery stores or large supermarkets. However, it is very simple and quick to make at home, so every homemaker should learn how to prepare it. 1. First, pour water into a saucepan and place it over heat. After it comes to a boil, add sugar and stir until completely dissolved. 2. Immediately after the sugar syrup begins to boil, add citric acid, cover with a lid, and simmer over low heat for forty-five minutes. 3. After 45 minutes, remove the saucepan from the heat and set it aside to cool. Dilute the baking soda slightly with water and add it to the cooled syrup. 4. Vigorously stir the contents of the saucepan, which will result in strong foaming. Once the foaming stops, set the saucepan aside and wait 15 minutes. After this, the molasses is ready.
