
Pattypan squash in the oven
Description
Pattypan squash is perfect for stuffing. You can use a vegetable filling, meat filling, or add cheese, herbs, cottage cheese. Baking time depends on the size of the vegetable. Remove the finished dish from the oven and let it cool slightly before serving. I recommend serving whole, sprinkled with fresh herbs.

1. Wash the pattypan squash, trim the stem end to create a lid. Remove all the flesh with a spoon. Brush the inside of the pattypan squash with vegetable oil, season with salt and pepper. Bake in a preheated oven at 180 degrees for about 1 hour.

2. Peel and finely chop the onion and garlic, wash the spinach. Heat a pan with vegetable oil, add half of the onion, all the garlic, and the spinach, sauté for 2 minutes.

3. Cut the mushrooms into small pieces. Sauté them with the remaining onion, then pour the wine into the pan and cook until the wine has evaporated.

4. Fill the baked pattypan squash with the stuffing: spinach, half of the mushrooms, half of the mozzarella, sliced tomatoes, the remaining mushrooms, and mozzarella. Sprinkle everything with grated hard cheese and oregano.

5. Cover with a lid and bake in a preheated oven at 180 degrees for 20-40 minutes.
