Pattypan squash, canned for winter

Description

A simple way to put up a good supply for later. Have you got pattypan squash? Great! It’s always nice to preserve favourite vegetables for winter, then open the jars and treat family and friends to this tasty treat. Give it a try—there’s nothing complicated here. Store in a cool, dark place.

    Prepare all the ingredients.

    Wash the pattypan squash under running water, then cut each one into 8–10 pieces, removing large seeds if necessary. Peel the garlic. Cut the hot pepper into 2–4 pieces and remove the seeds.

    Place dill seeds, black peppercorns, garlic, pieces of hot pepper, and sliced pattypan squash in sterilized jars. The tighter you pack the pattypan squash in the jars, the better.

    Pour boiling water over the contents of the jars. Cover the jars with sterile lids and leave for 30 minutes.

    Then pour the water into a container and prepare the marinade from it. Add salt and sugar, stir until dissolved, bring to a boil, and finally pour in the vinegar.

    Pour boiling marinade over the pattypan squash. Screw on the lids, turn the jars upside down, wrap them, and leave until cool.
