
Stuffed Pattypan Squash with Cheese
Description
Here is a simple recipe for stuffed pattypan squash with cheese. There are many ways to bake pattypan squash with a filling. I chose to bake these vegetables with tomatoes, onions, and hard cheese. Inexpensive and hearty, yet so delicious. Of course, if you wish, you can add some meat—up to you. Good luck!

Wash the pattypan squash, cut off the top, and remove the seeds and pulp.

Place garlic into a preheated skillet with vegetable oil.

When it turns golden, add the onion (finely chopped), and a few minutes later add the chopped tomatoes. Let it simmer, and season with salt and pepper to taste.

Season the insides of the pattypan squash with salt and pepper, then fill or pour the tomato and onion mixture into them, and generously sprinkle cheese on top. Place the pattypan squash in the oven for 35-40 minutes at 180 degrees Celsius.
