Description

Traditionally, patir is baked in a large oven and then placed in a bag to finish rising. In urban conditions, patir is also prepared, but slightly smaller than the traditional size (in Uzbek cuisine, this flatbread is made about the size of a soup plate). The dough rises for about an hour, and the flatbread bakes for no more than 35 minutes. The baking is ready. Serve at the table.

    1. To make patira, we will need all the ingredients for yeast dough. It is better to use milk of medium fat content.

    2. Warm the milk slightly (until warm), add the yeast to it. Add half a tablespoon of sugar and a couple of pinches of salt, stir everything and let it sit for 15 minutes.

    4. Knead the yeast dough and let it rise for one hour. During this time, it should be punched down once.

    5. When the dough is ready, shape it into a large flatbread, press it in the center, then prick it with a fork. The edges can be shaped into various patterns. Place the flatbread into a preheated oven at 180 degrees Celsius (350 degrees Fahrenheit) and bake for 35 minutes.

    Cover the finished Pateer with a napkin or towel and let it rest for a while. When the baked goods become soft, the flatbreads can be served.
