
Pasuts tolma
Description
The dish is prepared without unnecessary complications. Pasuts tolma is a classic Armenian dish. The name speaks for itself, as "Pasuts" translates to "Lent." There are several variations of this dish. Today I'm sharing a recipe. The finished dish can be served at the table.

Step 1

Prepare all the grains. Check them to make sure there are no spoiled kernels.

Pour water over the mixture of beans and grains, and leave overnight. Then boil until the beans are soft, about 1–1.5 hours. Drain the water, add salt and spices.

Prepare the cabbage leaves. If they are too sour, soak them in water for a couple of hours.

Place one or two spoons of filling on each sheet and fold into a parcel.

Wrap all the cabbage leaves and place the dolma in a cast-iron pot with a thick bottom.

Pour in vegetable broth, sprinkle with paprika, and simmer over low heat for approximately 1 hour. Serve the dish cold as an appetizer.
