
Turkey Pastrami
Description
It works for both holidays and everyday meals. You can replace turkey with chicken or beef. Use only lean meat: brisket, fillet, or tenderloin. Do you love spices? Then feel free to add more. Serve the dish only after it has cooled. Store the finished pastrami in the refrigerator in a container or wrapped in plastic wrap. Serve the appetizer at the table.

1. Remove the skin from the brisket, trim off any cartilage or small bones. Wash the meat thoroughly and pat it dry with paper towels.

2. Pour water into a saucepan, add sugar and salt, and put the saucepan on the heat; bring its contents to a boil.

3. Peel and crush the garlic cloves, add them to the pot, along with 1 tablespoon of pepper, 8 sprigs of thyme, cloves, and a bay leaf. Stir and set the brine aside to cool.

4. Place the turkey in a resealable bag, pour in the chilled brine along with all the spices, seal tightly, and refrigerate for 2 days.

5. After a couple of days, remove the meat from the brine, then rinse it thoroughly under cold water and pat it dry. Finely chop the black pepper and thyme with a knife and rub the meat with the resulting mixture.

6. Place the brisket in the smoker tray and cook for 45-55 minutes, then remove.

7. Before serving, chill the meat, then slice it into thin pieces.
