
Beef Pastrami
Description

Wash the beef and remove membranes and fat. Place the meat in a container and cover with water so it is fully submerged. Remove the meat and add salt to the water at a ratio of 1 cup of salt to 1 cup of water. Mix thoroughly and return the meat to the water. Cover the container with a lid and refrigerate for 12 hours.

After 6 hours, replace the salt solution by pouring in fresh brine.

For the marinade, mix all the spices.

Peel the garlic and cut each clove into 4 pieces.

Stud the beef with garlic.

Coat the beef on all sides with the marinade and place it in a foil-lined baking dish.

Place in the oven for 20 minutes at 240 degrees. After 20 minutes, turn off the oven and leave the meat inside for 2 hours; do not open the door!

Remove the meat from the oven, wrap it in foil, and let it cool completely. When the pastrami has cooled, replace the foil and refrigerate the meat for 6 hours.
