
Pastrami
Description
Pastrami is served cold; for this, refrigerate the meat for 24 hours. From pastrami you can make sandwiches, open-face sandwiches, canapés, salads, and even pasta. The meat is very tasty, tender, and juicy—be sure to make it when you get a chance. It can be served warm or chilled.

Prepare all the ingredients. Rinse the beef under running running water and trim off all membranes and excess fat.

Bring water to a boil in a saucepan. Add all the spices and seasonings, as well as the salt and sugar, and bring to a boil. Taste the marinade—it should appeal to you first and foremost.

Cool the marinade to room temperature, place the piece of beef in it, and refrigerate to marinate for at least 24 hours.

After some time, pat the meat dry with paper towels, lightly coat with vegetable oil, and thoroughly roll in smoked paprika.

Wrap the beef tightly in foil, fold over the edges, transfer to an ovenproof dish, and bake in an oven preheated to 160°C for 3 hours.

Remove the meat from the oven, let it cool directly in the foil, then refrigerate for at least 3–4 hours until completely cooled, preferably overnight.

Slice the well-cooled beef into thin slices and serve. Delicious, tender, and juicy meat is ready!
