
Gooseberry Pastila
Description
The dish is prepared without unnecessary complications. The fruit leather turns out quite tart, but this depends on the variety and ripeness of the gooseberries. If you prefer a sweeter version, add a little sugar or honey. The gooseberry puree can be strained through a fine sieve to make the fruit leather smoother. If you don't have special fruit leather trays, cut the desired shape from parchment paper and be sure to grease it with vegetable oil, otherwise you won't be able to remove the fruit leather. In the absence of a food dehydrator, you can prepare the fruit leather in a regular oven on a baking sheet lined with greased parchment paper. The finished dessert can be served at the table.

Prepare the gooseberries. Sort the berries, wash them, and dry them.

Remove the stems from the gooseberries and blend until smooth.

Grease the trays for meringue with vegetable oil. Pour the gooseberry puree into the trays.

Place the trays with puree in an electric dehydrator and dry for 8-10 hours at a temperature of 60-70 degrees.
