
Cranberry Marshmallow
Description
Pastila was prepared even in Ancient Rus and served during fasting periods. It's an excellent way to preserve cranberries for winter if you don't have space for storing them. You can make pastila from both fresh and frozen berries. You can add more sugar or replace it with honey—then the pastila will be even more beneficial.

Prepare all the necessary ingredients for making cranberry marshmallow. Sort the berries, removing twigs, leaves, and spoiled ones. Wash the cranberries and let all the water drain completely.

Pulse the cranberries into a smooth puree.

Add sugar to the puree and mix. Place the pot over low heat and cook, stirring, for 5 minutes after boiling.

Grease the drying tray for the meringue with vegetable oil and place the cranberry mixture onto it. Spread it out into a thin, even layer.

Dry the fruit leather at 60 degrees for 8-10 hours until done.

Remove the finished pastila from the tray and cut it into segments. Roll them up into little rolls.
