    Wash the quince, cut it into 4 parts, and remove the core. You can peel the quince if desired, but I don't do it.

    Transfer the prepared quince to a saucepan, pour in water, and bring to a boil.

    Place the quince puree onto a silicone or Teflon mat. Recommended thickness is no more than 4-5 mm. Spread the puree evenly so that the entire fruit leather dries uniformly. Dry in the oven at 60-75 degrees Celsius with the door slightly ajar for about 7-9 hours.

    The finished marshmallow should be pliable, easily peel off the mat, but not dry and brittle. For convenience, you can cut it into strips and roll into little rolls. Store the finished marshmallow in a tightly sealed container.
