Belovskaya pastila without sugar

Description

The dish is prepared without unnecessary complications. Pastila has been made in Russia since ancient times. In the past, it was made exclusively from natural ingredients. These could be any berries, fruits, and even milk. Classic pastila is made from apples, as they are the most common and accessible fruit (especially in temperate latitudes). Nowadays, it's hard to find completely natural products in stores. Therefore, it's better to prepare it at home. The finished dessert can be served at the table.

    Wash the apples and peel them. Don't throw away the peels—they are very healthy! By the way, you can make compote from them. Place the whole apples on a baking sheet and bake in the oven at medium temperature for about 40–50 minutes (depending on the size of the apples). Then remove the seeds and core from the apples and transfer them to a blender. Alternatively, you can strain them through a sieve.

    Add honey to the apple puree to taste. You can add sugar, or not add any sweetener at all, thus preserving the natural apple flavor. Blend the puree in a blender until it lightens in color. Then separate the yolks from the egg whites. Beat the egg whites with a pinch of salt until a thick, stable foam forms. Transfer the egg whites to the apple puree, remembering to set aside a few tablespoons for spreading on the pastilles.

    Take a baking sheet. Line it with parchment paper. Spread the puree so that the thickness is no more than 3-4 cm. Place in the oven at 90 degrees. Dry for 5-6 hours.

    After 6 hours, take out the baking sheet. Cut the layer into 4 pieces. Brush them with the reserved beaten egg white. Stack the layers on top of each other. Dry for 3-4 hours.

    Remove the finished pastila and sprinkle with powdered sugar (or starch) to prevent sticking. Store the pastila in the refrigerator. Try it—it's delicious!
