
Pasta with Kale and Walnut Pesto Sauce
Description
The recipe won't take much time. A small modification of the Pesto sauce will diversify the usual dish. Serve hot.

1. Trim the stems from the kale and coarsely chop the leaves. Finely chop the garlic. In a large pot of salted boiling water, cook the kale until tender, for 4–5 minutes.

2. Drain the cooked cabbage in a colander and rinse with cold water. Add the pasta to the pot and cook until done, according to the package instructions. Drain the pasta in a colander and reserve 1/3 cup of the pasta cooking liquid. Return the pasta to the pot.

3. Squeeze the kale dry on a paper towel to remove excess moisture. In a food processor, combine the kale, walnuts, garlic, and grated Parmesan cheese and blend until a smooth paste forms.

4. Season with salt and pepper, add lemon juice.

5. While the food processor is running, add the olive oil and mix.

6. Mix the prepared pesto sauce with the pasta. Add the reserved liquid to slightly thin out the sauce.

7. Sprinkle with additional toasted walnuts, grated Parmesan cheese, and serve immediately.
