Step 1

1. Finely chop the celery and onion, and cut the carrot very small so they completely dissolve during simmering. Crush or very finely chop the garlic. Cut the pancetta into small pieces.

Step 2

2. Melt the butter in a large, deep saucepan. Add the vegetables, pancetta, and garlic, and sauté for about 8–10 minutes, stirring constantly. Add both types of ground meat to the saucepan. Increase the heat and, using a wooden spoon, continuously stir and break up the lumps. The heat should be high. It's important to thoroughly break down all the lumps.

Step 3

3. Pour the milk into a saucepan, stir, do not reduce the heat, and let the meat mixture simmer for 10-15 minutes, until all the milk is absorbed into the meat. Remember to stir occasionally. As soon as the milk is absorbed, add the wine and boil for another ten to fifteen minutes.

Step 4

4. Pour in the canned tomatoes together with their juice, and add tomato paste. Add salt, ground black pepper, and herbs. Stirring and mashing the tomatoes with a spoon, bring to a boil.
