Pasta with meat sauce

Description

If a regular tomato paste and minced meat sauce can be made in 15 minutes, preparing "Bolognese" will take you over an hour, as the meat needs to be simmered over low heat—the longer, the better. This sauce is traditionally served with pasta, but you can use a different side dish.

    1. Cut the pancetta into small, elongated pieces and place it in a thick-walled pot preheated over medium heat. As soon as the pancetta begins to melt and release its fat, increase the heat and fry until browned.

    2. Add the pork and beef mince to the saucepan and fry, stirring with a spatula. Transfer the meat to another container, leaving as much fat as possible in the pan.

    3. Wash, peel, and finely chop the celery, carrots, and onion. Place these ingredients in a saucepan, cover with a lid, set to low heat, and cook for 10 minutes. Then remove the lid, increase the heat, and cook for another 10 minutes until all the water has evaporated from the vegetables and they darken.

    4. Pour the milk into the pot and return the meat. Cook for 10 minutes, stirring occasionally, until the milk has evaporated.

    5. Add the wine and cook for another 10 minutes, until most of the wine has evaporated.

    6. Grind the nutmeg. Add tomato juice, nutmeg, bay leaf, black pepper, mushroom seasoning to the saucepan and mix everything well. Cover the saucepan with a lid and reduce the heat to low. Cook for 1.5–2 hours, stirring occasionally to prevent burning. If the sauce becomes too thick, add a little water.

    7. Add tomato paste and cook for another 30 minutes, stirring constantly to prevent burning.

    8. Boil the pasta in salted water, drain it in a colander and rinse. Serve the pasta with the sauce and sprinkle with any grated cheese, and eat immediately.
