
Pasta with onion, bacon, and cheese
Description
The dish is prepared without unnecessary complications. Boil the pasta in salted boiling water according to the package instructions. Set aside 2 cups of the cooking liquid. Drain the pasta and return it to the pot. Meanwhile, cook the bacon in a large skillet over medium heat until browned, 5 to 7 minutes. Transfer to paper towels to drain excess fat. Add onion, garlic, and thyme to the skillet, season with salt and pepper. Cover and cook, stirring occasionally, until the onion begins to brown, about 15 minutes. Remove the lid and continue cooking until golden brown, 5 to 10 minutes more. Crumble goat cheese over the pasta, add the onion mixture and 1 cup of the reserved cooking liquid. Season with salt and pepper. Stir well, adding more liquid if needed. Serve immediately with bacon and thyme. The dish is ready to be served.
