
Pasta with salmon and tomato sauce
Description
Boil the pasta in boiling water according to the package instructions. Drain the water, reserving a small amount of the cooking liquid. Toss the pasta with 1 teaspoon of olive oil and keep warm. Heat 2 tablespoons of olive oil in a large saucepan over medium heat. Add the onion and cook until soft. Add the red pepper, oregano, and salmon. Break up the salmon with a spatula while cooking. Stir in dill, chopped tomatoes, and wine; bring to a boil. Reduce heat to low and simmer for 10 minutes; season with salt and pepper. Add a bit of the reserved cooking liquid if the sauce becomes too dry. Divide the pasta among serving plates. Make a well in the center of each portion and pour in the tomato-salmon sauce. Sprinkle with parsley and Parmesan cheese. Serve warm.
