
Pasta with mushrooms and wine

1. Add pasta to a saucepan of boiling salted water and cook until done. Slice mushrooms into thick pieces. Arrange mushrooms in a single layer on a baking sheet, drizzle with 2 tablespoons of olive oil, and season with salt and pepper to taste.

2. Place the baking sheet in a preheated oven at 190 degrees and bake the mushrooms for 20 to 25 minutes, until golden brown.

3. Peel and chop the onion. Heat the remaining olive oil and butter in a saucepan over medium heat. Sauté the onion for 2 minutes until translucent.

4. Add dry white wine and whiskey, cook for 1-2 minutes.

5. Add the chicken broth and cook for 2 minutes, until most of the alcohol has evaporated.

6. Add heavy cream and stir, reduce the heat.

7. Add the roasted mushrooms, season with salt and pepper. Cook until the sauce thickens. Add the cooked pasta and mix well. If the sauce seems too thick, add some of the pasta cooking liquid. Serve immediately.
