
Pasta with lentils and carrots
Description
The dish can be prepared directly in a saucepan or a deep sauté pan. For added aroma, add thyme and garlic to the sautéed mixture. You can use ready-made tomato purée, or purée fresh tomatoes without the skin.

1. Rinse the lentils in cold water. Wash and peel the vegetables.

2. In a large saucepan, heat vegetable oil and thyme over medium heat. Finely chop the onion, carrot, and garlic, then sauté until soft for about 5 minutes.

3. Add the lentils. Cook, stirring, for about 1 minute.

4. Pour tomato puree and water (3 cups) into the saucepan and bring to a boil.

5. Reduce the heat, cover with a lid, and cook until the lentils are tender, about 20 minutes. Season with salt and pepper. Remove from heat. Add yogurt and stir. If you plan to freeze this sauce, do not add the yogurt at this stage.

6. Meanwhile, cook the pasta in a large pot of boiling salted water according to the package instructions. Drain and mix with the sauce. Serve sprinkled with grated hard cheese.
