Pasta with white mushrooms

If you are using fresh mushrooms, clean off dirt and grass, trim off tough and damaged parts, wash, dry, and cut into cubes or slices. If the mushrooms are dried, pour boiling water over them and let soak for half an hour, then drain in a colander and let dry.

Meanwhile, cook the pasta for slightly longer than al dente, so that the inside of the pasta is still a bit firm. Here's a little secret: three minutes after you put the pasta into the pot, turn off the heat. Let the pasta sit in the hot water for about 10 minutes, absorbing just the right amount of moisture. Then drain the water, add a bit of olive oil, and shake the pot several times.

Peel the onion and cut it into small cubes.

Sauté the onion in a mixture of vegetable and butter over medium heat.

As soon as it turns golden, add the mushrooms and sauté until browned. Stir with a spatula to prevent burning. Add salt.

Warm the cream. Add flour, salt, and spices to it. Mix thoroughly and rub out all lumps.

Pour the cream into the pan in a thin stream. Continuously stirring, bring the mushroom sauce to the consistency of thin sour cream.

Add the pasta to the pan, mix well.
