
Pasta with eggplants

I didn't come up with the recipe for pasta with eggplants myself—it's a recipe I took from a cookbook on Italian cuisine. The author described it very deliciously,

Step 1

Peel the eggplant and cut into large cubes. Salt and let stand for 20 minutes. During this time, liquid will be released from the cubes, which should be drained off.

Heat olive oil in a skillet and sauté minced garlic for 1-2 minutes.

Add eggplants, salt and pepper. Fry for 2-3 minutes.

Add fresh herbs (I used thyme, but you can use any other), chicken broth (or water if you don't have broth). Bring to a boil, then reduce heat, cover with a lid, and simmer over low heat until the sauce thickens.

When the eggplants soften and turn into something resembling a liquid puree, remove from heat and serve with pasta, sprinkled with grated cheese. The eggplant pasta is ready.
