
Penne pasta with chicken, feta cheese and vegetables
Description
The dish is prepared without unnecessary complications. 1. Heat a frying pan and add cabbage, tomato, and parsley. Pour in vegetable broth (or olive brine). Simmer over low heat. 2. In a large pot, cook penne pasta until almost al dente. (Note: Salted water in a covered pot will boil faster.) 3. In a sauté pan, add 2 tablespoons of olive oil and sauté onion and celery. After 2–3 minutes, add garlic. A couple of minutes later, add the chicken. 4. Fry the chicken over medium heat, stirring, until it begins to brown. 5. By this time, the pasta should be ready. Drain the water from the pasta pot, leaving about 1/2 cup of the cooking water in the bottom. 6. Add the vegetable mixture and fried chicken to the pasta. Add feta cheese and oregano. Mix well, then place over low heat. 7. Let the flavors blend for 3–5 minutes. Taste and season with salt and pepper as needed. The dish is ready. Serve immediately.
