
Penne Pasta with Chicken and Marinara Sauce

1. Dice the onion. Mince the garlic. Preheat the oven to 150 degrees. Season the chicken thighs with salt and pepper. Heat olive oil in a large skillet over high heat.

2. Quickly sear the chicken thighs on both sides until golden brown, about 2 minutes per side. Transfer the cooked chicken to a plate.

3. Drain the fat from the skillet, leaving 1 tablespoon of the fat and oil mixture. Add the onion and garlic to the skillet, stir and cook for about 2-3 minutes.

4. Pour in the marinara sauce and mix.

5. Add the chicken thighs to the sauce. Cover with a lid and place the pot in the oven for 1 1/2 hours. You can also cook the chicken thighs in a slow cooker.

6. Cook the pasta according to the package instructions. Place 1 chicken thigh on each plate, add the pasta, and pour the prepared sauce over the top. Sprinkle with grated Parmesan, garnish with fresh basil leaves, and serve immediately. If serving to young children, remove the chicken meat from the bones before serving.
