
Pasta Carbonara with Green Peas
Description
A slight modification of the famous Italian pasta with bacon and a cheese and egg sauce. The pasta turns out very tasty and filling, and is prepared in just 25 minutes.

Step 1

1. Cook the pasta according to the instructions on the package. While the pasta is cooking, cut the bacon slices into small cubes and fry in a pan until the bacon becomes crispy.

2. Place the cooked bacon on paper towels to drain the fat. Pour off all the fat from the skillet, but do not wipe it out.

3. Heat a frying pan over medium-low heat and add the chopped onion and garlic. Cook until golden. Set aside.

4. In a bowl, mix the eggs, grated Parmesan cheese, cream, salt, and pepper until smooth. When the pasta is ready, drain the water, reserving 1–2 cups of the cooking liquid. Add the pasta to the bowl.

5. While the pasta is still hot, slowly pour in the egg mixture, stirring constantly. The sauce will thicken and should coat all of the pasta. Thin with a little hot liquid if the sauce seems too thick to you.

6. Add peas, bacon, sautéed onion, and garlic. Mix well and serve immediately with additional Parmesan cheese.
