Description
The recipe won't take much time. The Carbonara sauce, made from egg yolks and cheese, is fully cooked by the heat of the cooked pasta. Cream is not used in the classic version of Carbonara pasta. Serve hot.

Prepare the necessary ingredients for making carbonara pasta. Long types of pasta are suitable for carbonara: fettuccine, spaghetti, tagliatelle, linguine. Traditional carbonara uses guanciale (cured pork cheek), which can be substituted with pancetta, bacon, or pork belly.

For the sauce, separate the egg yolks from the whites. The whites will not be needed in this recipe. Place the yolks into a bowl of suitable size.

Peel the garlic cloves and chop finely with a knife or use a garlic press.

Mix the egg yolks with a fork, add half of the grated Parmesan cheese, salt, and ground black pepper. Stir the mixture.

Cut the bacon into medium-sized pieces.

Heat olive oil in a skillet and add the prepared bacon pieces. Fry until browned and the fat has rendered out.

Drain the pasta in a colander, reserving a small amount of the cooking water.

Transfer the spaghetti to the pan with the bacon. Mix and turn off the heat.

Pour a little of the pasta cooking water into the egg mixture, mix once again, then add the sauce to the spaghetti. Mix everything well. The creamy sauce coats the hot spaghetti thanks to its thick consistency. If necessary, add more pasta cooking water.
